Introduction
I've been a bit addicted to playing with toast lately, so I thought it would be fun and easy to make a bit of fun, and it's also easy to put the finished dragon fruit toast and dragon fruit together in a really goofy way~.
Ingredients
High gluten flour: 500g, old flour: 100g, milk: 320ml, sugar: 50g, salt: 4g, unsalted butter: 30g, cooked black sesame seeds: 40g
Steps
Step 1: Knead the dough first, mix all ingredients except butter and salt, pour into a kneading machine and knead at medium speed until it reaches 70% (with a coarse film), then add butter and salt and knead until there is a film.
Add different colors to the dough and continue kneading until uniform, add sesame seeds to the white color and knead together. Divide the dough into 3 colors, 70% white (for the inside), 25% red and 0.5% green. When mixing the colors, I added a little green to the red color to make the overall color less warm, and the green color has a little yellow and red in it to make the color blend better.
Place the dough in a place with temperature between 28-32 and 70% humidity to ferment, about 55 minutes, the fermentation is complete when the dough does not shrink back when pressed by fingers.
Take the dough out of the exhaust, press evenly, so that the final toast finished better look, white dough rolled into a rectangle, rolled up from one side, into a cylinder, the edge of the roll and close, close the mouth rolled a little thinner, easier to fit, close the mouth down.
Red exhaust, rolled flat, rectangular, wrapped inside the white part, and then the green rolled flat and rolled thin, with a knife to organize into a thin triangle, folded a little, mimicking the outer skin of the dragon fruit, pasted on the red dough. Then, put it into a toast box for second rise, and let it rise until it's 9 minutes full. (I used a taller chiffon cake mold, because I don't have a large round mold...)
Step 2, into the preheated oven, 155-160 degrees, 40 minutes, after baking take out the shock out of the heat, and then inverted and cooled, hot do not cut ~ toast will collapse, cooled with toast to the cutting can be eaten, you can not eat can be cut into slices and frozen oh! The size of the toast box will feel the final baking time, it is recommended that the low temperature because the red color if yellow will not look good! tips:
The red part is not too little, the area will be reduced later, the fermentation will be compressed when the outward expansion. Dragon fruit skin too thin will not look good!
The whole toast should have black sesame flavor, don't ask me if it's dragon fruit flavor hahahahahaha, sesame seeds should be kneaded in before the first hair, don't add it later, the result will be better!
