Introduction

Ingredients

Eggplant: 1, green pepper: 1/4, oyster sauce: 1 tbsp, soy sauce: 1 tbsp, salt: 1 tsp

Steps

Step 1: Wash and cut the eggplant into strips, marinate with salt for 15 minutes, squeeze out the water, add cornstarch and scrub well, soak the small dried fish and remove the meat from the bones, cut the green pepper into sections, and cut the green onion and ginger into pieces.

Step 2: Heat oil in a pan and add onion and ginger.

Step 3: Saute the fish.

Step 4: Add eggplant and stir-fry well

Step 5: Pour in the gravy

Step 6: Cover and simmer to reduce the sauce.

Step 7: Add bell peppers and stir-fry well

Step 8: Remove from the pot

Tips

Squeeze the marinated eggplant as hard as possible to remove the water, so that it can be coated with cornstarch and is less absorbent of oil.
