Ingredients
Butter: 100g, Egg yolks: 2, Wingfield Farms Chestnut Pumpkin: 100g, Low gluten flour: 190g, Sugar: 40g, Cream cheese: 20g, Salt: 1g
Steps
Step 1: Prepare ingredients: butter, egg yolk, low gluten flour, chestnut pumpkin, cheese, sugar, salt.
Step 2: Clean the pumpkin and remove the skin, cut into thin slices and plate.
Step 3: Place in a steamer and steam for 15-20 minutes. Use chopsticks to break it into pieces.
Step 4: Remove the steamed pumpkin and puree it while it is still hot.
Step 5: When the pumpkin puree is ready, the butter and cheese will be softened into toothpaste. Put the softened butter into a whisk bowl, add 1/2 of the sugar and salt and start beating with an electric whisk, each time until smooth.
Step 6: Add the egg yolks and beat until the butter is fluffy and white.
Step 7: Add cheese and beat well.
Step 8: Sift the pumpkin puree into the butter (this will make the cookies creamy and crispy).
Step 9: Sift the flour into the butter.
Step 10: Mix with a spatula to form a dough without dry flour.
Step 11: Shape the dough into a cylinder.
Step 12: Wrap the dough in plastic wrap and refrigerate for 2 hours or more, then remove from the refrigerator.
Step 13: Cut into 0.5cm thick slices and place on a baking sheet.
Step 14: Transfer to a preheated Fager steam oven at 180 degrees Celsius.
Step 15: Select full bake mode and bake at 170 degrees Celsius in the lower middle layer for 20 minutes.
Step 16: The pumpkin butter cookies are ready with a rich creamy flavor and a hint of chestnut flavor!
Step 17: Very tasty! It's good for young and old, but don't eat it if you have children under 1.5 years old.
