Ingredients
Digestive cookies: 80g, butter: 30g, strawberries: appropriate amount, fungus: 3g, sugar for fungus jelly: 20g, water: 500g, giletto slices for fungus jelly: 15g, cream cheese: 240g, light cream: 170g, sugar for cheese paste: 40g, giletto slices for cheese paste: 12g.
Steps
Step 1: Crack the digestive cookies and mix with the melted butter.
Step 2: Spread the biscuits into the molds and compact them.
Step 3: Cut the strawberries into short pieces and then cut them in half.
Step 4: Beat the cream cheese with 40g of granulated sugar until smooth. Beat the light cream until 5 minutes of flow, and mix well with the cream cheese.
Step 5: Melt the milk with the custard over water, pour into the cheese paste in step 4 and stir well.
Step 6: Pour half of the cheese mousse paste into the cookie base mold and refrigerate to solidify.
Step 7: Make the silver fungus jelly: Cook the silver fungus and water in a saucepan until transparent and thick, turn off the heat, stir in the giardiniera and 20g granulated sugar and set aside.
Arrange strawberries on the solidified mousse (cut strawberries in half and put them against the side of the mold)
Step 8: Pour the fungus on top and refrigerate to solidify.
Step 9: Pour the rest of the cheese mousse paste on top of the gingernut jelly and refrigerate to set.
Step 10: Remove the cake from the mold, squeeze the whipped cream over the cake and decorate with strawberries and greenery.
Tips
✔️ When unmolding, put a cup underneath the cake and use a hair dryer to blow a circle along the mold, then gently push the mold downward and it will be OK.
