Introduction.
A few days ago, I went to eat at a restaurant in town and ordered a chicken in a dry pot, not realizing that it would actually cost me 98 bucks a serving.
Chicken prices have always been very cheap, usually in town 10 yuan 1 catty is not surprising, I did not expect to put the chicken in a dry pot, add some seasoning, you can sell so expensive.
Today I might as well make my own dry pot chicken, the steps are simple, but the flavor is not inferior to the big restaurant at all!
Ingredients
Rooster: 1, dried chili peppers: appropriate amount, ginger: 1 spoon, cooking wine: half a bowl, pepper: 1 spoon, salt: 4 spoons + 1 spoon, starch: 1 spoon, sugar: 1 spoon, soy sauce: 2 spoons, peppercorns: 2 spoons, water: 1 bowl
Steps
Step 1: Chop the whole rooster into small pieces, add 1 tbsp of shredded ginger, ½ bowl of cooking wine, 1 tbsp of pepper, 4 tbsp of salt, 1 tbsp of cornstarch and marinate for 20 minutes.
Step 2: Cut dried chili peppers into segments and soak them in water so that they won't be easily stir-fried
Step 3: Start the pan and fry the chicken, with the grease side down and the chicken side up. Then flip the sides and repeat. Until the chicken is golden brown
Step 4: Using the oil left over from frying the chicken, sauté the ginger and garlic, then add the soaked dried chili peppers
Step 5: When you can smell the spicy flavor, put the chicken, then add seasonings (2 spoons of soy sauce, 1 spoon of salt, 2 spoons of peppercorns, 1 spoon of sugar, 1 bowl of water) and stir-fry for 1 minute, then turn to medium heat to reduce the sauce to taste.
Step 6: The finished product, spicy and flavorful, not fishy and not firewood.
Tips
Make sure you use a rooster, because hens are too fat!
