Introduction
Mashed Eggplant - a very favorite dish in summer
Ingredients
2 eggplants, 3 green peppers, 4 cloves of garlic, half a green onion, 1 tablespoon of sesame oil, 2 tablespoons of soy sauce, 1 tablespoon of soy sauce, 1 tablespoon of dark soy sauce, 4 slices of pancetta, 1 tablespoon of water, and some cooking oil.
Steps
Step 1: Wash eggplant and cut in half, steam for 10 minutes.
Step 2: After steaming, tear the eggplant into strips and put them into a bowl, pour out the water that settles out of the eggplant and set aside.
Step 3: Mince the chili and garlic
Step 4: Cut the pork into small cubes.
Step 5: Pour oil into a wok and sauté the diced pork.
Step 6: Stir-fry and brown
Step 7: Add a spoonful of bean paste
Step 8: Add 1 tablespoon of water, dark soy sauce for color, light soy sauce for seasoning, and a tablespoon of sesame oil.
Step 9: Stir fry until thickened and turn off the heat.
Step 10: Finely chop the green onion leaves.
Step 11: Add the chili pepper rings and garlic into the bowl with the eggplant.
Step 12: Add the chopped green onion and the meat sauce into the bowl, and then pick up the rolling pin and start pounding.
Step 13: Pound the meat into this shape
Step 14: Eat!
Tips
1. Use small onions instead of large onions, or add some cilantro and chili pepper.
2. Don't use too much water when frying the meat sauce.
3. Sliced pork can be replaced with minced pork.
